Ingredients
  

Main
  • 1 teaspoon dried butterfly pea flowers
  • 8 ounces hot water
  • 1/2 to 1 teaspoon honey or agave syrup optional
  • 1/2 teaspoon fresh lemon juice optional

Equipment

  • Kettle for heating water
  • Tea infuser or mesh strainer
  • Mug or teacup
  • Spoon for stirring
  • Small bowl (optional, for pH demonstration)

Method
 

  1. Bring 8 ounces of water to a boil in a kettle.
  2. Add 1 teaspoon of dried butterfly pea flowers to your tea infuser or strainer.
  3. Place the infuser into your mug.
  4. Pour the boiling water over the flowers in the mug.
  5. Let the tea steep for 5 minutes undisturbed.
  6. Remove the infuser and discard the flowers.
  7. Stir in honey or agave syrup if desired.
  8. Squeeze in 1/2 teaspoon of fresh lemon juice and watch the color transform from blue to purple.

Notes

Serve hot or over ice and enjoy the natural color-changing magic with optional citrus additions.
