Method
- Brew a strong pot of black tea and let it cool completely to room temperature, about 30 minutes.
- Pour the 2 cups brandy into your freezer-safe container and add the 6 ounces frozen orange juice concentrate and 6 ounces frozen lemon juice concentrate directly from the freezer. Stir vigorously to break them up and distribute evenly throughout the brandy.
- Pour the 4 cups of water into the container along with the 1 cup sugar. Stir for 2 to 3 minutes until the sugar completely dissolves and you see no grainy residue at the bottom.
- Add your cooled 2 cups brewed tea and stir the entire mixture well to combine all ingredients evenly.
- Cover your container tightly with a lid or plastic wrap and place it in the freezer. Make sure it sits level so the mixture freezes evenly.
- After about 2 hours, check the mixture and stir it thoroughly with a fork or whisk to break up ice crystals forming around the edges.
- Return the container to the freezer and stir again every 2 hours for the next 4 to 6 hours. Each stir helps create that smooth slushy texture rather than a solid block of ice.
- Once the mixture reaches a slushy consistency after about 8 hours total, leave it in the freezer until you're ready to serve. The slush will keep for up to 2 weeks in the freezer.
- To serve, scoop the brandy slush into chilled glasses and garnish with fresh mint leaves if desired. Serve immediately.
Notes
The key to perfect brandy slush is stirring every 2 hours during the first 8 hours of freezing to create that signature scoopable slush texture instead of a rock-solid frozen block. Use quality brandy that you'd actually drink on its own. If your slush becomes too solid, let it sit on the counter for 5 to 10 minutes before scooping to soften slightly. Store in freezer for up to 2 to 3 weeks.
