Ingredients
  

Main
  • 0.5 ounces grenadine syrup
  • 0.5 ounces blue curacao liqueur
  • 0.5 ounces Midori melon liqueur
  • 1.5 ounces dark or spiced rum
  • 2 ounces pineapple juice
  • 1 ounce coconut rum optional but recommended
  • Ice cubes
  • Lime wheel for garnish
  • Cherry for garnish optional

Equipment

  • Jigger or shot glass for measuring
  • Cocktail shaker
  • Strainer
  • Bar spoon for layering
  • Highball or tall cocktail glass
  • Knife for citrus garnish
  • Cutting board

Method
 

  1. Chill a highball or tall cocktail glass in the freezer for at least two minutes.
  2. Remove the glass from the freezer and fill it completely with ice cubes.
  3. Measure and slowly pour 0.5 ounces of grenadine syrup into the glass over the ice, letting it settle at the bottom.
  4. Using the back of a bar spoon, slowly layer 0.5 ounces of blue curacao liqueur over the grenadine.
  5. Layer 0.5 ounces of Midori melon liqueur on top of the blue curacao using the bar spoon technique.
  6. In a separate mixing glass, combine 1.5 ounces of dark or spiced rum and 1 ounce of coconut rum.
  7. Add 2 ounces of pineapple juice to the rum mixture and stir gently to combine.
  8. Slowly pour the rum and pineapple juice mixture over the back of a bar spoon into the main glass to preserve the layers.
  9. Garnish with a lime wheel and optional cherry, then serve immediately with a straw.

Notes

The key to visible layers is pouring each ingredient slowly over the back of a bar spoon and keeping your glass very cold before building the drink.
