Method
- Rinse 4 to 5 pounds of fresh blackberries under cool water and drain completely for 5 minutes.
- Transfer berries to a bowl and crush gently with the back of a wooden spoon until chunky.
- Layer crushed berries and 3 cups sugar in a large glass jar, ending with sugar on top.
- Cover the jar loosely and let sit at room temperature for 24 to 48 hours to draw out juices.
- Use a funnel to add 1.75 liters high-proof grain alcohol to the jar and stir gently.
- Pour in 2 cups filtered water and add 1 teaspoon vanilla extract, then stir to combine.
- Seal the jar tightly and store in a cool, dark place, shaking gently every few days for 3 to 4 weeks.
- Line a fine-mesh strainer with cheesecloth and strain the moonshine into a bowl, letting it drip for 15 to 30 minutes.
- Filter the strained liquid through a coffee filter or fine sieve into a clean container to remove sediment.
- Use a funnel to bottle the moonshine into glass bottles, label with date, and store sealed at room temperature.
Notes
Store in a cool, dark place for up to one year; shake before serving if sediment appears.
