A refreshing batch mojito made with fresh mint, lime juice, white rum, simple syrup, and club soda, prepared in advance to serve a crowd effortlessly.

Ingredients
  

Main
  • 3 cups fresh mint leaves loosely packed
  • 10 to 12 fresh limes about 1 1/2 cups fresh lime juice
  • 2 cups white rum 16 ounces
  • 3/4 cup simple syrup or 1/2 cup for less sweetness
  • 2 to 3 cups cold water or club soda
  • 3 to 4 cups ice for serving
  • A pinch of salt for the mint optional

Equipment

  • Large glass pitcher (at least 2 quarts capacity)
  • Cocktail muddler or wooden spoon
  • Measuring cups and spoons
  • Knife and cutting board
  • Bar spoon or long stirring spoon
  • Citrus juicer or hand juicer
  • Jigger for measuring (optional but helpful)
  • Serving glasses
  • Strainer (optional, for a cleaner pour)

Method
 

  1. Rinse mint leaves under cool running water and pat dry with paper towels.
  2. Lightly bruise the mint leaves in the pitcher by slapping them with the back of a spoon or your hand to release essential oils without crushing.
  3. Cut limes in half and juice with a citrus juicer, then strain through a fine-mesh sieve to yield about 1 1/2 cups of lime juice.
  4. Pour strained lime juice into the pitcher, add 3/4 cup simple syrup, and stir gently for about 30 seconds.
  5. Add 2 cups white rum to the pitcher and stir for about 1 minute to blend flavors.
  6. Pour 2 to 3 cups cold water or club soda into the pitcher, taste, and adjust as needed for desired strength.
  7. Cover the pitcher and refrigerate for at least 2 to 3 hours to chill and allow mint infusion.
  8. Strain the mixture through a fine-mesh sieve into glasses filled with fresh ice, using about 3/4 cup of the batch per glass.

Notes

Make simple syrup at home by heating equal parts sugar and water until sugar dissolves, then cooling completely before use for the freshest flavor.
