Method
- Fill the highball glass with 4 to 6 ice cubes, packing them firmly to keep the drink chilled.
- Rub a lime wedge around the rim of the glass, then dip the rim into a small shallow dish of tajín seasoning to coat evenly.
- Squeeze 0.5 ounce of fresh lime juice directly into the glass over the ice.
- Pour 0.25 ounce of hot sauce into the glass, starting with less and adjusting to taste.
- Stir the lime juice and hot sauce together with a bar spoon for about 10 seconds to combine.
- Tilt the glass at a 45° angle and slowly pour 12 ounces of Mexican lager beer over the back of a bar spoon to minimize foaming.
- Give the mixture a gentle stir for 3 to 5 seconds to marry the flavors without losing carbonation.
- Drop a lime wedge into the glass as a garnish and serve immediately while the beer is cold and the carbonation is lively.
