Ingredients
  

Main
  • 2 ounces Bacardi white rum
  • 10 to 12 fresh mint leaves
  • 1 ounce fresh lime juice about 1 lime
  • 1/2 ounce simple syrup
  • 4 ounces club soda or soda water
  • 1 cup ice crushed or cubed
  • 1 lime wheel for garnish

Equipment

  • Cocktail shaker or mixing glass
  • Jigger or measuring spoon
  • Bar spoon or long spoon
  • Muddler or wooden spoon
  • Strainer (bar strainer preferred)
  • Highball or rocks glass
  • Cutting board and knife
  • Citrus juicer or reamer

Method
 

  1. Fill a highball glass with crushed or cubed ice until it is three-quarters full.
  2. Rinse 10 to 12 fresh mint leaves under cold water, then gently pat dry.
  3. Place the mint leaves into a cocktail shaker and gently muddle five to six times until aromatic without shredding.
  4. Add 2 ounces of Bacardi white rum and 1 ounce of fresh lime juice to the shaker.
  5. Pour in 1/2 ounce of simple syrup to balance the tartness.
  6. Add fresh ice to the shaker and shake vigorously for about 10 seconds until the outside becomes frosty.
  7. Strain the mixture into the prepared ice-filled highball glass using a bar strainer.
  8. Top with 4 ounces of club soda or soda water and stir gently with a bar spoon.
  9. Garnish with a lime wheel and a fresh mint sprig, then serve immediately.

Notes

The key to the perfect mojito is gentle muddling of fresh mint and serving immediately to preserve the bright flavors and carbonation.
