Ingredients

  • 1 ripe avocado pitted and scooped
  • 1 cup coconut milk canned or fresh
  • 1 cup frozen pineapple chunks
  • 1/2 cup frozen mango chunks
  • 1/2 banana frozen
  • 2 tablespoons honey or agave nectar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup ice cubes
  • Pinch of sea salt
  • Optional: 1/4 cup coconut water for extra tropical flavor

Method
 

  1. Cut the avocado in half lengthwise, remove the pit, and scoop the flesh into the blender.
  2. Pour 1 cup of coconut milk into the blender with the avocado.
  3. Add 1 cup of frozen pineapple chunks to the blender.
  4. Add 1/2 cup of frozen mango chunks to the blender.
  5. Add the frozen 1/2 banana to the blender.
  6. Add 2 tablespoons of honey or agave nectar and 1/2 teaspoon of vanilla extract to the blender.
  7. Add a pinch of sea salt and 1/4 cup of ice cubes to the blender.
  8. Blend on high speed for 45 to 60 seconds until silky smooth, stopping to stir if needed.
  9. Pour the smoothie into two tall glasses and serve immediately with straws.

Notes

Freeze avocado halves in advance to skip scooping and ensure a chilled smoothie whenever the craving hits.
