Agua de Pepino (Cucumber Water)

A light, naturally sweet and refreshing Mexican beverage made with cucumbers, lime juice, water, and a pinch of salt.

Ingredients
  

Main
  • 2 large cucumbers about 1.5 pounds total, roughly chopped
  • 6 cups filtered or tap water divided
  • 2 limes juiced (about 1/4 cup fresh lime juice)
  • 1/4 teaspoon sea salt or table salt
  • 4 to 6 ice cubes for serving

  • Sharp knife
  • Fine mesh strainer or cheesecloth
  • Large pitcher
  • Wooden spoon or stirring utensil
  • Measuring cups and spoons
  • Glasses for serving

Method
 

  1. Wash the cucumbers thoroughly under running water and chop into rough chunks.
  2. Place the chopped cucumbers and 2 cups of water in the blender.
  3. Blend on high speed for 60 to 90 seconds until the mixture is smooth.
  4. Strain the blended mixture through a fine-mesh strainer lined with cheesecloth into the pitcher, pressing on the solids to extract all the liquid.
  5. Add the remaining 4 cups of water to the pitcher and stir well to combine.
  6. Juice the limes directly into the pitcher and stir to incorporate.
  7. Sprinkle the salt into the pitcher and stir thoroughly for about 30 seconds.
  8. Chill the agua de pepino in the refrigerator for at least 30 minutes or serve immediately over ice.

Notes

Don't throw away the cucumber pulp left in your strainer; use it in smoothies, blend into yogurt for a face mask, or compost it.
