Adeni Chai

A traditional Yemeni spiced tea blending cardamom, ginger, and black tea with milk and honey for a creamy, warming beverage.

Ingredients
  

Main
  • 2 cups water
  • 2 tablespoons black tea leaves loose leaf works best
  • 4 green cardamom pods lightly crushed
  • 1 teaspoon fresh ginger thinly sliced or grated
  • 2 whole cloves
  • 1 cinnamon stick broken into pieces
  • 1/2 cup whole milk or milk of choice
  • 2 teaspoons honey or sugar
  • Pinch of sea salt

Method
 

  1. Lightly crush the green cardamom pods using the flat side of a knife or a mortar and pestle to release their essential oils without pulverizing the seeds.
  2. Pour 2 cups of fresh water into a small saucepan and bring to a rolling boil over medium-high heat.
  3. Add the crushed cardamom, sliced ginger, whole cloves, and broken cinnamon stick to the boiling water, reduce heat to medium, and simmer for 2 minutes.
  4. Stir in 2 tablespoons of black tea leaves and steep for 3 to 4 minutes, depending on desired strength.
  5. Pour in 1/2 cup of milk and stir to combine, then continue heating over medium until small bubbles form around the edges, about 1 to 2 minutes without reaching a full boil.
  6. Remove from heat and stir in 2 teaspoons of honey or sugar and a pinch of sea salt, adjusting sweetness as needed.
  7. Strain the chai through a fine mesh sieve into serving cups, catching all spices and tea leaves.
  8. Serve immediately while hot and enjoy the aromatic flavors.

Notes

For best results, warm serving cups beforehand and reheat chai gently on the stove to preserve spice aromas.
